Ingredients

Eggs - Check your uncooked eggs to make sure that they're still good before using them. Fill a glass half full of water, and add in one egg at a time. If the egg sinks, the egg is fresh and ready to cook. If the egg floats, it's bad and needs to be thrown in the trash.

Cottage cheese - You can use low fat cottage cheese to cut down on fat content and calories.

Diced ham - This is optional but a great way to add flavor and taste.

Cheddar cheese - Any type of shredded cheese will work.

Sautéed vegetables - This is optional but a great way to add nutrition.

Salt and pepper - To Taste.

How to make a Cottage Cheese Omelet

Step One: Combine the eggs with 2 T of cottage cheese and the salt and pepper into a blender. Blend together until nice and smooth.

Expert Tip: It will be frothy and bubbly looking, but that's fine.

Step Two: Heat a frying pan or skillet over medium heat and spray with nonstick cooking spray.

While the pan is heating, mix together the fillings that you want to add to your omelet.

Step Three: Pour the egg into the pan and then cook for 5-6 minutes.

Step Four: Add the fillings that you want to half of the omelet. Use a spatula to flip over the half that is empty to cover the fillings on the other side.

Step Five: Fold over the half that is empty to cover the fillings on the other half of the omelette. Serve immediately.

Variations

Add bacon - Bacon is always welcome. Always.

Use different veggies - You can up the veggie game easily when you make an omelet! Add spinach, diced tomatoes, chopped green onion, or anything else that you want to this delicious breakfast.

Add toppings - Once you make this cottage cheese omelette recipe, don't forget to add toppings. Sprinkling on parmesan cheese, adding some hot sauce, or even herbs or black pepper are all great ideas.

Common Questions

Do I need to cover my egg with a lid while cooking?

No, there's no need to put a lid on top of the omelet while it's cooking. If you feel that you need to, you can, but it will make the egg cook quicker, so that is something to be aware of.

Can I add butter to the pan?

If you don't want to spray the pan with nonstick cooking spray, you can add oil or butter to do the same thing. Just a little bit of butter will work perfectly fine.

If you use salted butter, some of that salty flavor will transfer to the omelet, so keep that in mind when you're doing so. You can use salted or unsalted butter, both.

Do I need to saute the spinach leaves before adding them?

If you're going to add any greens to your egg omelet, you can add them sauteed or raw, either way. If you don't want them to have a thick texture, cooking them down first in a pan over medium heat will make them tender.

Can I store leftover omelets?

Yes, if you have some of your omelet left over, you can easily store it in the fridge until later. This is a simple way to save some of this easy breakfast for the next morning as well.

I don't recommend freezing the omelet as the texture won't be right when you thaw it. This is meant to be enjoyed fresh with fresh ingredients for the best texture and taste.

Ingredients

  • 3 eggs
  • 6 tablespoon cottage cheese divided
  • ¼ cup diced ham, cheddar cheese, sauteed vegetables, etc. optional
  • teaspoon salt
  • 1/16 teaspoon pepper

Instructions

  • Combine the eggs with 2 tablespoons of cottage cheese, salt, and pepper in a blender. Blend until smooth.

  • Heat a 9-inch frying pan over medium heat. Spray with cooking spray. Pour the egg mixture into the pan. Cook for 5-6 minutes until the eggs are mostly set.

  • Combine the remaining cottage cheese and any other fillings you desire. Add to half of the omelet. Flip half over the cover filling. Serve immediately.
