Is everyone ready for the long weekend? Time off to enjoy family, friends and in my case lots of skiing & eating…ThisRustic Roasted Beets & Sweet Potato Salad is simple to prepare and well worth spending just a little bit of time in the kitchen.Remember my Maple Citrus Roasted Pecans? They are in this salad too. They offer up crunchy sweet satisfaction.
Dress this salad however you wish. I like a citrus dressing, just a simple twist of fresh lemon and olive oil.
Roasting root veggies (any veggies really) brings out so much flavor. A few times a week I take a few giant sheet pans, chop up vegetables and roast the heck out of them. Here are a few recipes you might like with roasted veggies:

It is quite a beautiful salad, with the lovely colors once again. Best way to eat a salad. I love a simple lemon and olive oil drizzle as well. Brightens up the veggie flavors and is so easy.

Roasted beets are like nature’s candy! People who say they don’t like beets haven’t had them done right, I swear. And of course, sweet potatoes are their own little candy. Glorious pairing!

This is a salad I can have any time of year! It looks like a real feast with all these healthy ingredients! I love that it has spinach and avocado! Also, love that beet and sweet potatoes are roasted in this salad!
